Another great recipe from Mindy. This one combines summer’s favorite lemonade with vodka. Mindy uses Tito’s Vodka. This is a great “end of the summer” relaxer.
5 cups Water
1 cup Sugar
1 1/2 to 1 3/4 tablespoon Dried Lavender (sold in the spice section, most grocery stores)
3/4 cup Lemon Juice (about 4-6 lemons)
the juice of 1/2 Lime
1) Combine sugar with 1 cup water in a medium saucepan. Bring to a boil over medium heat (not higher, or you’ll burn the sugar), stirring till the sugar dissolves.
2) Add lavender, cover, and remove from heat. Let stand for a min of 2 minutes, up to 2 hours (I do just 2-5 minutes and it tastes great. I don’t have time to wait 2 hours).
3) Strain mixture, discard lavender. Pour infusion into a glass pitcher (or any large pitcher). Add the strained lemon/lime mixture, and 4 more cups of cold water. Stir.
Stick that in the fridge while you add ice cubes to some glasses (we use Ball Jars). Pour 1 – 1 1/2 shot glasses full of Tito’s Vodka (or whatever liquor you are partial to) into the jars. I like a small lime wedge on the rim of the glass. If you wanted to get fancy, you could roll the rims in sugar first…but the lemonade is definitely sweet enough (my opinion).
For those who care, this is both vegan and gluten free (including the vodka).
